Peanut Butter S'mores Bars

Peanut Butter S'mores Bars blend creamy peanut butter and sugars into a thick dough enriched with graham cracker crumbs and chunks of milk chocolate and mini marshmallows. The batter is dense and rich, integrating classic s'mores flavors in a bar form. Baked until just set, these bars have a chewy texture with pockets of melted chocolate and toasted marshmallow sweetness throughout.

Description

The Peanut Butter S'mores Bars combine softened butter and creamy peanut butter with both light brown and granulated sugars, beaten light and creamy. Eggs and vanilla are incorporated before mixing in a dry blend of all-purpose flour, graham cracker crumbs, baking powder, cornstarch, and salt. Milk is added to loosen the dough slightly, which is then folded with chopped milk chocolate pieces and mini marshmallows. The resulting batter is thick and generous with mix-ins.

Spread into a prepared 13x9 pan and baked at 350°F until a toothpick comes out with just a few crumbs, these bars develop a chewy texture with rich peanut butter flavor punctuated by melted chocolate and toasted marshmallow bits. Allowing the pan to cool fully before cutting helps the bars set and slice cleanly.

For presentation, reserving one chopped chocolate bar to press on top before baking creates a glossy, chocolate-studded surface. These bars are suited for dessert or sweet snack occasions where nostalgic s'mores taste is desired in a convenient baked good.

Ingredients

Servings
  • 1 cup butter softened, unsalted
  • 1 cup peanut butter I don't recommend using natural peanut butter, creamy
  • 1 cup light brown sugar tightly packed, or dark brown sugar
  • 1 cup granulated sugar
  • 1 egg plus 1 large egg yolk
  • 1 ½ teaspoons vanilla extract
  • cups all-purpose flour
  • ½ cup graham cracker crumbs
  • 1 teaspoon baking powder
  • 1 teaspoon cornstarch
  • ½ teaspoon salt
  • 2 Tablespoons milk
  • 7 .55 oz milk chocolate Hershey bars chopped into pieces* or 2 cups milk chocolate chips (340g)
  • 1 ½ cups mini marshmallows

Instructions

  1. Preheat oven to 350F (175C) and line a 13x9 metal pan with parchment paper or grease and flour the sides and bottom of the pan.
  2. Combine butter, peanut butter, and sugar in a large bowl and use an electric mixer to beat until light, creamy and well-combined.
  3. Add egg/egg yolk and vanilla extract, and stir well.
  4. In a separate bowl, whisk together flour, graham cracker crumbs, baking powder, cornstarch, and salt.
  5. Gradually, on low speed, add flour mixture to peanut butter mixture, pausing occasionally to scrape down sides of bowl.
  6. Add milk and stir until combined.
  7. Fold in chopped Hershey bars and mini marshmallows -- the batter will be thick (I broke a spatula stirring it so proceed with caution!).
  8. Spread batter into prepared ban and bake on 350F (175C) for 25-28 minutes (toothpick inserted in center should come back mostly clean with only a few crumbs)
  9. Allow to cool completely before cutting and serving.

Notes

  • Reserve one chopped chocolate bar to press onto the top of the batter before baking for a decorative finish.
  • Do not use natural peanut butter; creamy peanut butter blends best for texture and flavor.
  • Ensure bars cool completely before cutting to achieve clean slices and avoid crumbling.
