Peanut Noodles with Roasted Broccoli
Description
This recipe roasts broccoli at a high temperature until slightly charred, enhancing its natural sweetness and smoky notes. Meanwhile, the peanut sauce is prepared by warming sesame oil with minced garlic and fresh ginger, then whisking in peanut butter, soy sauce, water, lime juice, honey, and chili garlic sauce (sambal oelek), resulting in a harmonious blend of savory, sweet, spicy, and tangy flavor.
Cooked ramen noodles are drained and combined with the sauce, roasted broccoli, sliced red bell pepper, green onion, chopped peanuts, and fresh cilantro. The noodles absorb the rich sauce while the fresh herbs and crunchy peanuts add contrast. The dish serves well warm as a main course or a side.
Ingredients
broccoli
- 2 to 3 cups broccoli really you can use as much as you'd like here!, florets
- 1 tablespoon sesame oil toasted
- pinch salt
- pinch black pepper
- pinch crushed red pepper flakes
peanut noodles
- 2 ramen noodles flavor packets discarded
- 3 tablespoons sesame oil
- 2 garlic minced, cloves
- 1 teaspoon ginger freshly grated
- 1/3 cup peanut butter
- 1/4 cup soy sauce (I like reduced sodium tamari)
- 1/4 cup water warm
- 1 tablespoon Chili garlic sauce (sambal oelek)
- 1 tablespoon lime juice fresh
- 1 teaspoon honey
- 1 red bell pepper thinly sliced
- 3 green onion thinly sliced
- ¼ cup peanut chopped
- 3 tablespoons cilantro chopped, fresh
Instructions
- Preheat the oven to 425 degrees F. Place the broccoli on a baking sheet and drizzle with the oil. Sprinkle with the salt, pepper and crushed pepper flakes. Roast for 15 to 20 minutes, until slightly charred.
- While the broccoli is roasting, bring a pot of salted water to a boil to cook the noodles.
- In a large skillet or saucepan, make the sauce. Heat the sesame oil over medium-low heat. Add in the garlic and ginger and cook for a 1 minutes. Stir in the peanut butter, soy sauce, water, chili garlic sauce, lime juice and honey. Stir until combined and smooth.
- Cook the noodles according to the directions (if using ramen noodles, it’s about 3 minutes!) Drain the noodles well.
- Add the noodles to the sauce and toss. Toss in the red peppers, green onions, peanuts and cilantro. Add in the roasted broccoli. Toss everything well, until it’s combined. Serve immediately.
