Peanut Satay Sauce Recipe
Description
The Peanut Satay Sauce begins with sautéing finely minced onion, ginger, and garlic in coconut oil to develop a soft and fragrant base. Coconut milk and natural peanut butter are added, bringing creaminess with a pronounced peanut flavor. Soy sauce provides depth and saltiness while lime juice adds brightness and acidity to balance the richness. Red curry paste imparts a mild heat and aromatic complexity. Coconut sugar (or brown sugar) can be added optionally to adjust sweetness subtly. Cooking the sauce briefly thickens it; if it becomes too thick, additional water or coconut milk can be stirred in to reach desired consistency. For a smoother texture, blending the sauce after cooking is an option. Using natural peanut butter, which contains only peanuts and salt, avoids added sweetness and yields a stronger peanut taste. Conventional peanut butter can be used but results in a sweeter, less pronounced peanut flavor.
Ingredients
- 1 tablespoon coconut oil
- 1 medium onion finely minced
- 1 tablespoon ginger finely minced
- 3 cloves garlic finely minced
- 1 cup coconut milk can be light, canned
- ½ cup peanut butter see notes, natural
- 2 tablespoons soy sauce gluten-free if needed
- 2 tablespoons lime juice
- 1 tablespoon red curry paste
- 2 teaspoons coconut sugar optional, or brown sugar
Instructions
- Melt the coconut oil in a small pan over medium heat. Add the onion and sauté for 5 minutes, or until it is soft and translucent. Add the ginger and garlic and cook for 1 minute more.
- Add the coconut milk, peanut butter, soy sauce, lime juice, red curry paste, and if using the sugar. Let the sauce cook for 1 minute, or until it has thickened. If it thickens too much add a splash of water or extra coconut milk.
- Optional Step: if you'd like a velvety satay sauce, blend it until smooth.
Notes
- Use natural peanut butter (only peanuts and salt) for the most pronounced peanut taste and smooth blending in the sauce.
- If you use conventional sweetened peanut butter, you may want to omit added sugar for balance.
- Adding a small amount of water or extra coconut milk helps adjust sauce thickness if it becomes too thick during cooking.
