  • 4 cups spring mix lettuce blend
  • 4 pear thinly sliced, fresh
  • ½ cup walnuts candied
  • 4 tablespoons dried cranberries
  • 4 ounces goat cheese , crumbled
  • honey balsamic dressing

Instructions

  1. Evenly divide the lettuce blend over 4 plates or place it all on a large, shallow serving dish. Top with thinly sliced pears and sprinkle evenly with the walnuts, cranberries and goat cheese.
  2. In a small bowl, make the honey balsamic dressing (follow link). Mixture might have a few little chunks. I find it easiest to do in a small food processor or bullet style blender.
  3. Slowly add the olive oil to emulsify.
  4. Drizzle over the salad and serve.
