Description
This recipe starts by melting butter in a skillet, then adding sliced carrots and water along with salt to simmer until the carrots are tender yet retain some bite, about five minutes. Instructions
- In a large skillet over medium-high heat, melt butter until foaming. Add carrots, water, and salt (I like 1/4 teaspoon).
- Bring to a simmer. Reduce heat, cover, and simmer until carrots are tender, about 5 minutes.
- Stir in peas and continue cooking until heated through, about 5 minutes longer. Season to taste with salt and pepper.
Notes
- Rinse frozen peas under cold water to thaw quickly, or add frozen peas directly and increase cooking time slightly.
- This recipe yields approximately 2 cups, enough for four 1/2-cup servings.
- Store leftovers covered in the refrigerator for up to 4 days.
