Description

Instructions

  2. Bring to a simmer. Reduce heat, cover, and simmer until carrots are tender, about 5 minutes.
  3. Stir in peas and continue cooking until heated through, about 5 minutes longer. Season to taste with salt and pepper.

Notes

  • Rinse frozen peas under cold water to thaw quickly, or add frozen peas directly and increase cooking time slightly.
  • This recipe yields approximately 2 cups, enough for four 1/2-cup servings.
  • Store leftovers covered in the refrigerator for up to 4 days.
  • Preparing carrots by peeling and slicing can be done up to 3 days in advance and stored refrigerated.
