Pecan Pie Brownies

Pecan Pie Brownies layer traditional boxed brownie batter topped with a thickened pecan pie mixture made from sugar, corn syrup, eggs, butter, vanilla, and chopped pecans. The result is a dessert combining dense, fudgy brownies with a sticky, nutty pecan topping that firms up but remains slightly jiggly when baked through.

Description

This recipe begins with preparing classic boxed brownie batter spread evenly in a greased 9x13-inch pan. The brownie layer bakes halfway through while a thick syrupy filling cooks on the stove. The filling consists of granulated sugar, light corn syrup, eggs, butter, vanilla extract, and chopped pecans, cooked until it thickly coats a spoon but remains pourable.

After the brownies’ initial bake, the pecan pie filling is poured over and gently spread across the surface. The pan returns to the oven for 25 to 30 minutes of additional baking until the pecan layer has largely set with a slight jiggle remaining. Once cooled, the brownies present a dense, moist base with a rich, caramelized pecan topping.

These brownies offer a dessert with textural contrast between fudgy cake and chewy, nut-studded topping. They are suitable for casual gatherings or as a richer treat for those who enjoy layered desserts with nuts.

Ingredients

Servings

Brownie Ingredients

  • 1 brownie mix for 9x13 pan, boxed
  • Ingredients listed on brownie mix package

Pecan Pie Layer

  • 1 cup granulated sugar
  • 1 1/2 cups light corn syrup
  • 4 egg
  • 1/4 cup butter unsalted
  • 1 1/2 teaspoon vanilla extract
  • 2 cups pecans chopped

Instructions

  1. Preheat oven according to brownie package instructions.
  2. Mix brownie batter according to package instructions.
  3. Combine the sugar, corn syrup, eggs, butter, and vanilla in a small saucepan and cook over medium heat stirring often.
  4. Pour brownie batter into a greased 13x9 inch baking dish and place in oven to bake for half of the total bake time on your brownie package instructions.
  5. As the brownies bake, the filling in the saucepan should have thickened enough to coat your spoon (about 15 minutes).
  6. Stir the chopped pecans into the mixture and continue to cook for 2-3 minutes more. (It should be a pourable thick consistency, but not liquid.)
  7. When the brownies are done with their pre-baking, pour the pecan mixture over the top and gently spread it around to all of the edges.
  8. Place the baking dish back in the oven to bake an additional 25-30 minutes, or until the pecan pie layer is mostly set but still a little jiggly.
  9. Cool completely before serving.
