Pecan Pie Muffins

Pecan Pie Muffins combine brown sugar, chopped pecans, flour, butter, and eggs into a rich batter that bakes into moist, nutty muffins. The texture balances tender crumb with the crunch of pecans, mimicking the flavors of classic pecan pie in a portable muffin form. These muffins are generously greased for easy release and bake quickly to a golden finish, suitable for breakfast or snack times.

Description

Pecan Pie Muffins bring the taste of pecan pie to a handheld baked good using simple pantry ingredients. The mixture of brown sugar and chopped pecans provides a sweet, nutty flavor profile, while the butter and eggs create a moist, tender crumb. The flour binds the batter into a shape that holds well in muffin cups.

Preparing the muffins involves beating the butter and eggs together, then gently folding in the dry ingredients just until combined to avoid overmixing. Baking at 350°F ensures the muffins cook evenly, with smaller mini muffins requiring less baking time compared to regular-sized ones. A generous greasing of the muffin cups is essential to prevent sticking and to maintain the muffin's shape.

Once baked, running a knife around the edges before removal helps keep the muffins intact. These muffins can be enjoyed warm or at room temperature and serve nicely as a snack, breakfast treat, or alongside coffee or tea.

Ingredients

Servings
  • 1 cup light brown sugar packed
  • ½ cup all-purpose flour
  • 2 cups pecans chopped
  • 2/3 /3 cup butter softened
  • 2 egg beaten

Instructions

  1. Preheat oven to 350 degrees F. Grease mini or regular muffin cups generously. Grease them well or they will stick. In medium bowl, stir together brown sugar, flour and pecans. In a separate bowl, beat the butter and eggs together. Stir in dry ingredients just until combined.
  2. Spoon batter into muffin cups about 2/3 full. Bake for 12-13 minutes for mini muffins or 15-17 minutes for regular size muffins. Run a knife around the edge of each muffin and pop it out.

Notes

  • Grease muffin cups generously to prevent sticking and allow muffins to release cleanly after baking.
  • Mini muffins require a shorter baking time (12-13 minutes) compared to regular-sized muffins (15-17 minutes).
  • Run a knife around the edge of each muffin after baking to help remove them without breaking.
