Pellet Grill Smoked Steak

This Pellet Grill Smoked Steak recipe features Porterhouse steaks seasoned simply with salt and pepper, smoked at low temperature to develop smoky flavor and tenderness, then finished at high heat for a medium-rare finish. Butter and parsley add richness and freshness. The method enhances the meat’s natural qualities with a two-stage cook for a smoky crust and juicy interior.

Description

The process begins by bringing the steaks to room temperature, with optional salting early to tenderize the meat. The pellet smoker is preheated to a low temperature of 165°F, which allows gentle smoking and flavor infusion over approximately 45 minutes until the steak reaches an internal temperature of 110°F. Then the temperature is increased sharply to 500°F to sear and develop a crust while cooking the steak to 135°F, achieving medium-rare doneness. This two-step approach optimizes tenderness and smoky flavor without overcooking.

Finishing the steaks with butter and parsley adds a buttery richness and a subtle herbal note. The method and simple seasoning highlight the quality of the meat and the smoky notes imparted by the pellet grill. The temperature and timing can be adapted to reach preferred doneness.

This steak pairs well with traditional sides or enjoyed on its own to appreciate the smoked flavor and juicy texture achieved by this gradual cooking technique.

Ingredients

Servings
  • 2 Porterhouse steak You can substitute your favorite cut of steak
  • salt
  • black pepper
  • 2 tablespoons butter unsalted is ok to use, salted
  • 2 teaspoons parsley

Instructions

  1. Allow your steaks to come to room temperature if not already there. You can salt the steaks before they reach room temperature, as this will make them extra tender.
  2. Preheat your pellet smoker to 165 degrees. This usually takes around 15 minutes, depending on the smoker.
  3. Sprinkle the steaks with salt and pepper on both sides.
  4. Place steaks in the smoker and cook for about 45 minutes (or until the internal temperature reaches 110 degrees.)
  5. Turn the smoker up to 500 degrees and let it smoke for another 15 minutes or until the internal temperature reaches 135 degrees (for medium-rare steak). See notes if you like your steak less or more cooked.
  6. Top with a pat of butter and some parsley. Enjoy!
