Description
Pepitas Pesto blends fresh cilantro and flat-leaf parsley, some with stems, with garlic cloves and raw pepitas providing a unique twist on traditional pesto. Seasoned with kosher salt and black pepper, the ingredients are pulsed until finely minced, then combined with extra virgin olive oil and lemon juice, resulting in a coarse, textured sauce.
The pesto has a bright, herbal flavor from the cilantro and parsley, balanced by the nuttiness of pepitas and freshness of lemon. It can be used immediately or stored in an airtight container refrigerated for up to three days.
The recipe yields about one and a half cups and uses fresh herbs to retain vibrancy. Adjust seasoning to taste when preparing, allowing you to control saltiness and acidity.
Ingredients
- 1 cup cilantro some stems are okay) rinsed and patted or spun dry, fresh, roughly chopped

- ½ cup Pepitas unsalted, raw (pumpkin seeds
- ½ teaspoon kosher salt or more to taste
- ¼ teaspoon black pepper ground
- ½ cup extra virgin olive oil
- 1 Tablespoon lemon juice fresh
Instructions
- Place the cilantro,parsley, garlic, pepitas and salt and in a food processor.
- Pulse for 5 seconds and then scrape down the sides of the bowl. Repeat the pulsing and scraping about 5 more times until the ingredients are finely minced.
- Add the olive oil and pulse again until the pesto is combined and looks like a coarse meal. About 30 seconds. Scrape down the sides again if necessary.
- Taste and adjust the seasoning with more salt as needed.
- use the pesto immediately or transfer to an airtight container or glass jar. Refrigerate it for up to 3 days.
Notes
- The pesto yields about 1½ cups and should be refrigerated if not used immediately.
- Adjust salt to personal taste after combining all ingredients.
- Use fresh herbs rinsed and dried properly for best flavor and texture.
