Description
This creamer blends non-dairy milk such as cashew milk with coconut cream and a little water to build a rich, creamy base. Unsweetened cocoa powder and coconut sugar dissolve into this mixture, imparting chocolate flavor and sweetness. Peppermint extract is added in controlled amounts to give a cool, minty aroma and taste without overwhelming the cocoa.
The mixture is simmered on low heat for a few minutes with stirring to meld the flavors and dissolve the dry ingredients. After cooling, it can be stored in the refrigerator and shaken before each use. Adding it to hot or iced coffee enriches the drink with mocha and peppermint character, providing a flavorful alternative to plain creamers.
Users can adjust the sweetness by adding more sugar if desired and should store the creamer in an airtight container for up to one week. Peppermint extract quantity can be increased cautiously for stronger flavor.
Ingredients
- 1 cup non-dairy milk I used Cashew, can also use sweetened, unsweetened
- 2/3 cup coconut cream see notes
- 1/3 cup water or another 1/3 cup of non-dairy milk
- 1.5 TBS unsweetened cocoa powder
- 3 TBS coconut sugar or dry sweetener of choice (see notes)
- 1/4-1/2 tsp peppermint extract to taste (see notes)
Instructions
- In a small saucepan, combine the non-dairy milk, coconut cream and water until warm. Add in the cocoa powder, coconut sugar, and peppermint extract. Whisk until cocoa and sugar are dissolved. Bring mixture to a boil, then let simmer for 5 minutes while whisking continuously.
- Let mixture cool, then transfer to jar with lid. Enjoy in hot or cold coffee! Once refrigerated, give the jar a good shake before each use.
Notes
- Use canned coconut cream or separate coconut cream from full-fat coconut milk chilled overnight for best texture.
- Adjust sweetness by adding 1-2 tablespoons more coconut sugar if needed.
- Start with 1/4 teaspoon peppermint extract and increase gradually to avoid overpowering the flavor.
- Store the creamer in an airtight container in the refrigerator for up to one week.
