  • 1 coconut milk 13.5oz, light, canned
  • 3/4 cup light brown sugar packed
  • 1/4 cup cocoa powder unsweetened
  • 1 tsp peppermint extract
  • 1/8 tsp salt

Instructions

  1. Add coconut milk, brown sugar and cocoa powder to a small sauce pan
  2. Whisk the ingredients together and bring to a boil - be careful not to let the mixture boil over the edge of the pan
  3. Once boiling, reduce to a simmer
  4. Simmer uncovered for 14 minutes, whisking occasionally
  5. Remove the pot from heat and allow to cool for a minute before whisking in the peppermint extract and salt
  6. Allow the syrup to cool completely then place in a glass jar and store in the refrigerator for up to 2 weeks

Notes

  • Evaporated milk or sweetened condensed milk can replace coconut milk; using condensed milk will yield a sweeter syrup.
  • Coconut sugar or white granulated sugar may be used instead of brown sugar, adjusting sweetness and flavor.
