Perfect Hard Boiled Eggs (Easy Peel)

This recipe shows how to make hard boiled eggs with shells that come off easily. Using cold water, kosher salt, and baking soda while cooking helps create eggs that peel without sticking. The eggs are boiled briefly, then rested covered off the heat and cooled in an ice bath, resulting in firm whites and fully set yolks without a green ring.

Description

Perfect Hard Boiled Eggs (Easy Peel) uses a simple cooking and cooling technique to produce eggs that are easy to peel. The eggs start in cold water with salt and baking soda, which can alter the pH to loosen the shell's membrane from the egg white. After bringing the water to a boil and boiling briefly, the pot is covered and removed from the heat to finish cooking gently. Cooling the eggs in ice water stops the cooking process and further loosens the shell. The eggs have a smooth texture with firm but tender whites and fully cooked yolks. This method helps prevent the green-gray ring around the yolks sometimes found in overcooked eggs.

The process requires just a small amount of salt and baking soda, standard kitchen ingredients that improve peelability. The eggs are peeled by lightly cracking the shells and removing them carefully. These eggs are suited for salads, sandwiches, or snacks where neat peeling is desirable.
