Perfect Outback Steakhouse Alice Springs Chicken (Copycat Recipe)
Description
This chicken dish starts by marinating boneless, skinless chicken breasts sprinkled with seasoned salt, which enhances flavor and helps tenderize. After pan-cooking the chicken until golden and thoroughly cooked, it is smothered with a homemade honey mustard sauce blending prepared mustard, honey, light corn syrup, and mayonnaise for smoothness and sweetness balance.
Layers of sautéed mushrooms, crisp bacon pieces, and shredded Colby Jack cheese are added atop the sauced chicken. Baking or microwaving the assembled chicken melts the cheese and lets flavors combine. Garnishing with parsley adds fresh color and subtle herb notes.
Serve this dish with some of the honey mustard sauce reserved for dipping to highlight the recipe's characteristic tang and sweetness. It works well as a hearty entrée featuring rich textures and tastes, balancing smoky bacon, savory mushrooms, and creamy cheese.
Using freshly grated cheese avoids anti-caking agents and helps achieve better melting. Resting the cooked chicken before assembly retains juiciness. Cooking bacon to extra crispness maintains texture beneath the melted cheese.
Ingredients
Honey Mustard Sauce
- 1/2 cup prepared mustard
- 1/4 cup honey
- 1/4 cup light corn syrup
- 1/4 cup mayonnaise
Chicken
- 1 pound boneless skinless chicken breasts (4 portions)
- 1/2 teaspoon seasoned salt Morton Season-All brand
- vegetable oil
- 1 cup mushroom canned or jarred, drained, sliced
- 6 pieces Bacon fried until crisp and cut in half crosswise
- 3 cups Colby jack cheese shredded
- 2 teaspoons parsley chopped
Instructions
- Blend all the ingredients for the honey mustard sauce until smooth. The corn syrup may be adjusted to your taste. Set aside until needed.
- Rub the chicken breasts with seasoned salt and set aside to marinate for 1 hour.
- Cook the chicken in a pan over medium heat with just enough oil to prevent sticking. Cook on both sides until the chicken is slightly golden and reaches an internal temperature of 165°F. Remove the chicken from the pan.
- Slather the chicken breasts with honey mustard sauce. Top with mushrooms and 3 pieces of bacon. Sprinkle with shredded Colby Jack cheese until the chicken is completely covered.
- Microwave or bake in a 350°F oven just until the cheese melts.
- Sprinkle with parsley and serve with honey mustard sauce.
Notes
- Pound the chicken breasts to an even thickness for uniform cooking and tenderness.
- Allow the chicken to marinate for at least one hour to enhance flavor.
- Cook bacon until extra crispy to maintain its texture under melted cheese.
- Use freshly grated Colby Jack cheese instead of pre-shredded for better melting without anti-caking agents.
- Let the chicken rest for 5 minutes before assembling to preserve its juices.
- Reserve some honey mustard sauce for serving as a dipping sauce alongside the dish.
- Check the internal temperature of chicken to ensure it reaches 165°F for safe consumption.
