Ingredients

  • 1 1/2 cups flour all-purpose or cake
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 egg free-range
  • 1/2 tsp baking powder or baking soda
  • 1/2 tsp salt
  • 1 cup peanut butter crunchy or smooth
  • 1/2 tsp vanilla extract or essence

Instructions

  1. Preheat the oven to 180C/350F
  2. Beat the butter and sugar until light and fluffy
  3. Add the egg and continue to beat for a minute more
  4. Add the peanut butter and vanilla extract and beat to combine
  5. Sift the flour, baking powder and salt and add to the batter, and mix briefly until the batter comes together
  6. Roll the dough into small balls about 1 inch (3 cm), place on a lined baking sheet and press down with a fork (in one direction as I did, or in two directions to get a criss-cross effect)
  7. Bake for about 10 to 15 minutes until a light golden brown, then remove and allow to cool on a cooling rack
