Perfect Steakhouse Baked Potato

This baked potato recipe uses russet potatoes rubbed with vegetable oil and kosher salt then baked directly on the oven rack until tender with a crisp, salty skin. It's a straightforward classic side dish with a fluffy interior and flavorful skin reminiscent of steakhouse potatoes.

Description

The Perfect Steakhouse Baked Potato calls for large russet potatoes that are washed and dried thoroughly early in the day. About an hour before baking, each potato is rubbed with vegetable oil and sprinkled generously with kosher salt, which adheres to the oiled skin and creates a crisp, seasoned exterior. The skin is pricked several times with a sharp knife to allow steam release during baking.

The potatoes are placed directly on the oven rack at 350°F and baked for 45 minutes, then rested for 10 minutes. This method results in a tender, fluffy interior beneath a crunchy, flavorful skin seasoned by salt and oil. Baking directly on the rack rather than a pan helps heat circulate evenly, improving texture.

This technique produces classic steakhouse-style baked potatoes suited to accompany grilled meats or similar main dishes. They can be served with toppings as desired, such as butter, sour cream, or chives.

Choosing good-sized russet potatoes is important for the right texture and moisture balance. Drying the potato skin before oiling is key for effective oil and salt adherence and crispness.

Ingredients

Servings
  • 1 russet potato for baking, per person
  • 1 Tbs vegetable oil amount per potato
  • 1 teaspoon kosher salt amount per potato

Instructions

  1. Early in the day, long before dinner, wash your potatoes and allow them to completely dry before preparing for dinner. Preheat the oven to 350.
  2. One hour before dinner, pour the Tbs of vegetable oil on a paper towel and rub the oil over the entire outside of the baked potato. Over the sink, sprinkle the oiled potato with kosher salt so that the oil adheres to the potato. Most of the salt will fall off of the potato - you might want to put a plate under the potato and catch the salt and use it on the next potato. That is up to you. Using a sharp knife and poke at least 4 holes into each potato.
  3. Place the potatoes bare skinned directly onto the rack of the oven. Bake for 45 minutes. Remove from the oven and allow to rest for 10 minutes. You can bake as many potatoes this way as will fit in your oven.

Notes

  • Use large russet potatoes for best results when baking.
