Perfect Vegan Sloppy Joes
Description
Perfect Vegan Sloppy Joes combine crumbled tempeh with diced onion, bell pepper, jalapeño, garlic, and scallions sautéed in olive oil. The mixture simmers in a sauce of marinara, apple cider vinegar, maple syrup, mustard, smoked paprika, and garlic powder, creating a rich and savory filling. The water added cooks off, leaving a thick texture suited for sandwich assembly.
To serve, this filling is spooned over toasted hamburger buns and layered with lettuce, sliced red onion, and optional jalapeño slices for extra heat. This plant-based version maintains the hearty, saucy profile of sloppy joes while using vegan ingredients.
Leftovers can be refrigerated for up to three days or frozen for three months for convenience. Reheating gently with a splash of water helps restore the texture. Variations include adjusting jalapeño level to control spiciness and using alternative buns such as whole grain or gluten-free options. Grinding tempeh instead of crumbling speeds preparation.
Ingredients
For the filling:
- 1 tbsp olive oil
- ½ yellow onion diced
- 1 green bell pepper diced
- ½ jalapeño finely chopped
- 2 cloves garlic minced
- 2 prigs scallions chopped
- 7 oz tempeh crumbled
- 1/2 cup water
- 1 ½ cup marinara sauce
- 1 tbsp apple cider vinegar
- 1 tbsp maple syrup
- 1 tsp mustard
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp salt or to taste
- ½ tsp black pepper freshly ground
For the vegan sloppy joes:
- 4 Hamburger Bun toasted
- 1 red onion sliced
- ½ jalapeño sliced, optional
- 8 lettuce leaves
Instructions
- Heat olive oil a large skillet or frying pan over medium-high heat. Add diced onion and bell pepper and sautée for one or two minutes, then add jalapeño, garlic and scallions. Cook for 1 more minute.
- Add crumbled tempeh, water, marinara sauce, apple cider vinegar, maple syrup, mustard, smoked paprika and garlic powder. Let cook for 10 more minutes or until water is mostly adsorbed, stirring occasionally. Season with salt and pepper to taste.
- Serve the sloppy joes filling over toasted hamburger buns with lettuce, sliced onions and jalapeño for extra spiciness.
Notes
- Grind tempeh in a food processor to speed up preparation instead of manually crumbling.
- Store leftovers in the fridge up to three days or freeze for up to three months for batch cooking convenience.
- Reheat slowly with a little water added to restore the filling's consistency.
- Use whole grain, gluten-free buns, ciabatta rolls, or sliced bread as alternatives to traditional hamburger buns.
- Reduce or omit jalapeño slices if a milder spice level is preferred.
- Omit raw sliced onions if their flavor is too strong.
