Perfectly Poached Eggs with Dijon Sauce

Perfectly Poached Eggs with Dijon Sauce feature softly cooked eggs simmered gently to retain tender whites and runny yolks, served with a tangy sauce made from plain yogurt, Dijon mustard, and lemon juice. This method uses a mesh sieve to gently strain eggs before poaching, helping shape a neat exterior. The creamy sauce adds bright, savory notes that enhance the eggs' delicate flavor.

Description

This recipe includes poaching eggs by first draining excess loose egg white through a mesh sieve, then simmering eggs in nearly boiling water without stirring, to maintain form and tenderness. The poached eggs cook for 3-5 minutes depending on desired yolk doneness.

The Dijon sauce is a simple blend of plain yogurt, Dijon mustard, lemon juice, salt, pepper, and diced green onion, balancing creaminess with tang and a mild sharpness. The eggs are served hot with the sauce spooned over or alongside.

These poached eggs make a versatile protein accompaniment for breakfast or brunch, pairing well with toast or vegetable sides. The sauce adds flavor without overwhelming the egg's natural taste.

Ingredients

Servings
  • 4 egg
  • ¼ cup PLAIN yogurt
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • salt pinch
  • black pepper pinch
  • green onion diced

Instructions

  1. Bring about 3" water to boil in a saucepan. Reduce heat to a simmer. Do NOT swirl the water before adding the egg.
  2. Set a mesh sieve in sink or over a bowl, and crack 1 egg into sieve. Allow egg to drain for a few seconds, and then carefully pour egg into the water. Repeat for each egg. Cooking Tip: Keep in mind that you are not separating the egg yolk from the egg white while straining.  When straining, simply watch for a portion of the egg white to slip through the sieve.  Once it stops straining, you can move on to the next step.Mesh Sieve Tip: If you're using s super-fine mesh sieve or a nylon sieve, the egg will take about 2-3 minutes to drain.  A standard mesh sieve will only take a few seconds.
  3. Simmer eggs 3-5 minutes, depending on desired doneness. Remove eggs from water with a slotted spoon. Set eggs on a paper towel to get rid of excess water.
  4. To prepare sauce, add all remaining ingredients into a small bowl and mix together.
  5. Serve eggs hot with the sauce.
