Peri Peri Mayonnaise - Perinaise

Peri Peri Mayonnaise blends creamy mayonnaise with smoked paprika, ground African bird eye chili or cayenne, garlic, lemon juice, and optional sugar for a spicy, tangy dipping sauce or spread. The balance of spices and acidity creates a flavorful condiment that can be tailored to preferred heat levels.

Description

The Peri Peri Mayonnaise, also called Perinaise, starts by combining ground paprika, garlic, and chili powder to form a fragrant, spicy base. Mixing these dry ingredients thoroughly before adding mayonnaise ensures even flavor distribution. Lemon juice adds acidity and brightness, while a pinch of sugar can round out the flavors. Salt is added to taste, enhancing the complex seasoning.

The resulting sauce is smooth, creamy, and moderately spicy depending on the amount of chili used. It carries a smoky undertone from the paprika and a fresh zip from the lemon juice. This mayonnaise can be served immediately or chilled to allow flavors to meld further, making it a versatile condiment.

Perinaise complements grilled meats, sandwiches, or roasted vegetables, adding a spicy and creamy element without overpowering dishes.
