Peri Peri Sauce

Peri peri sauce is an African sauce made from piri-piri chilis that is salty, spicy, and a bit sweet. You can add it to almost anything!

Ingredients
- 1 red onion chopped, small
- 1 red bell pepper chopped
- 1 yellow bell pepper chopped
- 2 red chili fresno, small
- 2-3 piri-piri chilies stems removed, or Thai bird's eye chili
- 4 cloves garlic
- 2 tsp kosher salt
- 1 tbsp paprika powder
- 1 tbsp lemon zest
- 1/4 cup lemon juice
- 1/2 cup white vinegar
- 1/4 cup vegetable oil
Instructions
- In a food processor add all ingredients except the oil. Process well until every thing is well combined.
- After that pour in vegetable oil with processor running until smooth and emulsified.
- Pour the mixture in a pot. Heat over high until it starts boiling. Turn the heat to low and simmer for 20 minutes, or until the mixture has reduced to half.
- Remove from heat and let cool for at least 15 minutes. Puree once again until smooth in consistency.
