Peruvian Aji Verde Sauce Recipe
Description
The Peruvian Aji Verde Sauce Recipe creates a vibrant green sauce by pureeing cilantro, mint leaves, jalapeno (seeded), garlic, mayonnaise, cotija cheese or Parmesan, aji amarillo paste, lime juice, water, and salt. The combination balances fresh herbs, mild heat, tangy cheese, and creamy mayonnaise, resulting in a smooth and flavorful sauce.
The texture is creamy and pourable, making it suitable to drizzle over meats, vegetables, or use as a dipping sauce. The aji amarillo paste brings a distinctive Peruvian yellow chili flavor, though it is optional if unavailable.
This sauce should be refrigerated and used within one week to preserve its bright flavor and freshness.
