Description

This Peruvian Green Sauce is made by gently sautéing red onion in olive oil until softened, which mellows its sharpness. The onion is then transferred to a blender with mayonnaise, white vinegar, yellow mustard, kosher salt, and freshly ground black pepper. The addition of chopped jalapeños, including some of their ribs for moderate heat, fresh cilantro leaves and stems, and crushed garlic creates a vibrant green sauce that blends until completely smooth and creamy.

  • 2 tablespoons olive oil
  • 1/4 cup onion red, chopped
  • 1/2 cup mayonnaise use compliant mayo for whole30, light Hellman’s
  • 2 tablespoons white vinegar
  • 4 teaspoons yellow mustard (Guldens)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper freshly ground
  • 3 jalapeños (roughly chopped seeded but keeping the ribs (about 1 cup/3 oz))
  • 2 cups cilantro 2 oz rinsed well, chopped; fresh; leaves and stems
  • 3 garlic crushed through a press, medium cloves

Instructions

  1. Saute the onion in a small skillet with 1 teaspoon of the oil until soft, 3 to 4 minutes.
  2. Transfer to the blender then add the remaining oil, mayo, vinegar, mustard, salt and pepper.
  3. Then add the chopped jalapeno, cilantro and garlic and blend on high speed until the sauce is smooth and creamy, about 30 seconds.
