Pesto Mozzarella Chicken Sliders
Description
This recipe arranges the bottoms of slider buns in a baking pan, optionally spread with mayonnaise, then layered with cooked shredded chicken, basil pesto, and mozzarella slices. The top bun halves are placed on and brushed with a mixture of melted butter and pesto. The sliders bake uncovered briefly before covering and baking further to melt the cheese thoroughly.
The result is warm, tender chicken combined with fresh pesto flavor and melted mozzarella, held together by soft slider buns with a buttery finish on top. Baking in a pan keeps the sliders together and moist. These sliders serve well as finger food or casual meal components.
They can be assembled ahead of time and refrigerated, then baked just before serving. When baking from cold, allow extra time to ensure the cheese melts and the sliders heat through fully.
Ingredients
- 18 slider buns cut in half crosswise
- 2 cups chicken rotisserie chicken works great!, cooked and shredded
- 11 ounces pesto Buitoni brand, with basil
- 2 tablespoons butter melted
- 15 lices mozzarella cheese
- ⅓ cup mayonnaise optional
Instructions
- Preheat oven to 400 degrees and lightly grease a 9x13 inch baking pan. Arrange the bottom halves of the slider buns side by side in the pan. In a small bowl stir together melted butter and 2 tablespoons of the pesto and set aside.
- Spread mayo on the bottom sliders buns (optional) then layer evenly with shredded chicken, pesto, mozzarella slices, and finish with top halves of the buns. Brush pesto-butter mixture over the tops of the sliders.
- Bake for 10 minutes uncovered, then cover with foil and continue to bake 10-15 more minutes until cheesy is melted. Serve warm.
Notes
- Sliders can be prepared ahead, refrigerated tightly covered, then baked before serving.
- Add 10-15 minutes to baking time if cooking straight from the refrigerator to ensure thorough heating.
