Pesto Salad Dressing

My fresh and vibrant Pesto Salad Dressing recipe is so easy to make at home with basil pesto. With only 3 ingredients, it's great in an emergency!

  • ½ tablespoon basil pesto easy homemade recipe or store-bought
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice to taste, fresh
  • salt to taste

Instructions

  1. In a small jar or bowl add basil pesto, olive oil and a little splash of the lemon juice (we will be adjusting this later if needed).
  2. Put the lid on and give it a good shake (or a really good stir).
  3. Taste, then add a tiny pinch of salt (to start with).
  4. Taste again then add more lemon or salt as necessary.

  • We are using lemon juice as a seasoning - like the salt too - which means you can balance the taste to suit your own preference.
  • Too salty? Too lemony? Just add a little more pesto and olive oil and taste again.
