  • 1 teaspoon olive oil
  • 1 pound ground chicken
  • 2 cloves garlic minced
  • 1 onion diced, small, white
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon ginger freshly grated
  • 1 teaspoon sriracha
  • 1 can (8 ounces) water chestnut drained, sliced
  • 2 green onions thinly sliced
  • salt to taste, Kosher salt and freshly ground
  • black pepper to taste, Kosher salt and freshly ground
  • 1 to 2 butter lettuce heads
  • carrot optional, shredded

Instructions

  1. Add olive oil and ground chicken to a large non-stick skillet. Cook and crumble chicken over medium-high heat until browned. Drain any fat.
  2. Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger, and Sriracha until onions have become translucent, about 1 to 2 minutes. Stir in chestnuts and green onions until tender, about 1 to 2 minutes; season with salt and pepper, to taste.
  3. Spoon several tablespoons of the chicken mixture into the center of a lettuce leaf. Top with shredded carrots, if desired. Serve immediately and enjoy!
