Philly Cheesesteak Stuffed Peppers combine halved green bell peppers filled with a cooked mixture of thinly sliced steak, sautéed onions, and topped with provolone cheese. Description

The recipe starts by roasting cored and halved green peppers in a casserole dish with a bit of water to steam and soften them. Separately, onions are sautéed until translucent, then thinly sliced steak is cooked in the same skillet until done, seasoned with salt and pepper. The pepper halves are filled with this steak and onion mixture and topped with slices of provolone cheese, then baked uncovered until the cheese melts and the peppers become tender.

This preparation gives the peppers a softened texture that holds the rich, savory filling and melted cheese. The result is a lower-carb, vegetable-forward take on a Philly cheesesteak without bread, allowing the pepper’s slight bitterness to contrast with the savory meat and creamy cheese.

Ingredients

  • 4 green pepper
  • 1 tablespoon olive oil
  • 1 cup yellow onion diced
  • 1 pound steak thinly sliced
  • 8 lices provolone cheese
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat oven to 400°F
  2. Slice bell peppers in half from top to bottom and remove seeds and white ribs. Place peppers cut side up in a casserole dish with about 1/4 inch of water on the bottom.  Cover the dish with foil and place in the heating oven. 
  3. In a skillet add 1 tablespoon of olive oil and once heated add diced onions cooking until translucent, approximately 5 minutes.
  4. Add steak to the skillet and continue to cook until steak is cooked through, approximately 5 minutes. Salt and pepper to taste
  5. Remove the peppers from the oven. Sprinkle a little salt in each pepper and stuff each with the steak and onion mixture. 
  6. Place one slice of provolone cheese over each pepper and place back in the oven , uncovered, for 20 minutes or until the peppers have softened. 
  7. Enjoy!
