Pichi pichi is a steamed gelatinous dessert made from cassava and sugar, that is traditional in the Philippines and Palau.

Ingredients
- 1½ lb cassava , grated
- ⅔ cup caster sugar
- 2 cups water
- 3 oz. ripe coconut flesh , grated
- ½ teaspoon lye water (sodium hydroxide)
- ½ teaspoon pandan extract

Instructions
- In a bowl, add the cassava, the sugar and the water, then mix well.
- Add the lye water stirring the mixture continuously.
- Add the pandan extract, then mix well again.
- Once the mixture is homogeneous, pour into individual molds like muffin pans and place in the basket of a steamer.
- Cover and steam on medium heat for 45 minutes (or until the color becomes translucent).
- Let the steamed pichi-pichi cool for at least 1 hour then unmold.
- Roll each piece in the grated coconut.
- Serve immediately.
