Pichi Pichi

Pichi pichi is a steamed gelatinous dessert made from cassava and sugar, that is traditional in the Philippines and Palau.

Ingredients

  • lb cassava , grated
  • cup caster sugar
  • 2 cups water
  • 3 oz. ripe coconut flesh , grated
  • ½ teaspoon lye water (sodium hydroxide)
  • ½ teaspoon pandan extract

Instructions

  1. In a bowl, add the cassava, the sugar and the water, then mix well.
  2. Add the lye water stirring the mixture continuously.
  3. Add the pandan extract, then mix well again.
  4. Once the mixture is homogeneous, pour into individual molds like muffin pans and place in the basket of a steamer.
  5. Cover and steam on medium heat for 45 minutes (or until the color becomes translucent).
  6. Let the steamed pichi-pichi cool for at least 1 hour then unmold.
  7. Roll each piece in the grated coconut.
  8. Serve immediately.
