Pickle Relish

Pickle Relish blends diced cucumber, green bell pepper, and onion with vinegar, sugar, and spices for a tangy, slightly sweet condiment. Simmering the vegetables softens them while maintaining some crunch. The mixture combines savory, tart, and spicy notes in a versatile relish perfect for enhancing sandwiches or grilled foods.

Description

In this Pickle Relish, diced cucumber, green bell pepper, and white onion start by simmering with half the apple cider vinegar to soften and develop flavor while loosening liquid. After draining excess liquid, the vegetables are returned to the pot with the remaining vinegar, cane sugar, mustard seeds, sea salt, red pepper flakes, and celery seed. A final simmer melds the flavors and infuses the relish with spiciness and tang.

The result is a relish with balanced acidity and sweetness, accompanied by subtle heat from red pepper flakes and depth from mustard seeds and celery seed. The vegetables retain some texture for pleasant mouthfeel without raw harshness. This relish can brighten any dish that benefits from bold, pickled notes.

Chilling after cooking allows the flavors to meld further. It’s a multipurpose condiment ideal for sandwiches, hot dogs, hamburgers, or even as an ingredient in sauces. The recipe does not specify long-term storage but chilling until use keeps it fresh.
