  • 3 lbs cabbage
  • 1/2 lb carrot
  • 1/2 lb onion
  • 1/2 lb red bell pepper
  • 1 tbsp salt
  • 6 tbsp granulated sugar
  • 1/3 cup white vinegar
  • 1/4 cup neutral cooking oil olive or avocado, generic cooking oil

Instructions

  1. Prepare all the veggies. Cut them by hand or use a Mandoline Slicer.
  2. Place all the veggies in a large bowl. Massage them lightly by hand.
  3. Add salt, sugar, vinegar and oil. Toss together to spread the seasoning evenly.
  4. Pack the cabbage mixture tightly into jars. Cover with a lid and leave to refrigerate overnight. The cabbage is ready to eat the next day!

Notes

  • This recipe yields approximately 2 liters of pickled cabbage, suitable for multiple servings or storage.
  • Using a Mandoline slicer helps achieve even, thin slices for consistent texture.
