Pickled Garlic Scapes

Pickled Garlic Scapes are so easy! They can be canned in waterbath or just cold pack can them! So no messing with the canning pot and the heat in the kitchen! They are great on sandwiches, burgers and salads or use them on your next charcuterie board!

Ingredients

Servings
  • 60 garlic scapes depending on the size
  • 2 cups vinegar
  • 1 cup sugar
  • 1 teaspoon Turmeric
  • 1 teaspoon celery seed
  • 2 teaspoon kosher salt

Instructions

  1. Sterilize jars and lids.
  2. Cut garlic scapes into desired sizes and shapes. load into jars, leaving enough room on top for headspace.
  3. Add vinegar and spices to a small saucepan and bring to boil.
  4. Pour hot pickling liquid (brine) into jars leaving ½ inch headspace. Remove air bubbles with plastic or wooden tool. Wipe rims of the jars with damp paper towel to remove debris. Apply 2 piece lids.

For Cold Pack Canning

  1. Let jars cool on counter. Refrigerate. Wait at least 1 week before opening to allow pickling process.

For Boiling Water Bath Canning

  1. Place jars in water bath canning pot. Process 10 minutes. Jars will be shelf stable for about 1 year, if stored in a cool, dark place.

Notes

  • **NOTE** Calories for this recipe are not accurate because all of the pickling is not consumed, and the calorie count is for an entire half pint.
  • Choose whether to cold pack can, or water bath can.
  • Cold pack canned vegetables will last 4-6 months in refrigerator.
  • Water bath canned vegetables are shelf stable for at least 1 year.
