Pickled Red Onions

Pickled Red Onions are thin slices of red onion soaked in a spiced vinegar solution with sugar and kosher salt. The quick pickling process softens the onions while adding a tangy and slightly sweet flavor. These onions bring a crisp, bright contrast to many dishes and can be stored refrigerated for up to a month.

Description

Pickled Red Onions prepared here involve thinly slicing a medium red onion and briefly rinsing if strong to mellow their sharpness. They are then boiled in a mixture of water, apple cider vinegar, granulated sugar, and kosher salt for one minute before being cooled and refrigerated. The pickling liquid penetrates the onion slices to provide a balance of acidity, sweetness, and saltiness.

The result is a pleasantly tangy yet mild onion with a slightly crunchy texture that can enhance tacos, sandwiches, salads, or grilled dishes. The use of kosher salt ensures the right seasoning level; if substituting table salt, the quantity should be adjusted.

The pickled onions keep in the fridge for up to one month when stored in jars. After the onions are used, the leftover pickling liquid can be combined with olive oil for a homemade salad dressing or be added to marinades.

  • ¾ cup water
  • cup apple cider vinegar
  • 3 tablespoons granulated sugar
  • 1 ½ teaspoons kosher salt

  4. Remove from heat and cover with a lid. Let sit 20 minutes.

Notes

  • Use kosher or coarse salt for proper seasoning; reduce quantity if substituting table salt.
  • Re-purpose old sauce jars to store pickled onions safely in the fridge.
