Pickled Red Onions

Pickled Red Onions are made by slicing red onions thin and soaking them in a hot vinegar brine infused with multicolored peppercorns, mustard seeds, cumin seed, salt, sugar, and optionally jalapeno for mild heat. After cooling and refrigerating, the onions develop a bright, tangy flavor with a crisp-tender texture, perfect for adding acidity and crunch to many dishes.

Description

Start by thinly slicing red onions for even pickling, ideally using a mandoline or similar slicer. The pickling liquid combines white vinegar, water, various spices including peppercorns, mustard seeds, and cumin seed, along with salt and sugar, heated to release the aromatics. Adding sliced jalapeno provides optional heat.

The hot brine is poured over the onions and peppers in a jar, soaking to cover all pieces. After cooling, refrigerate to allow the flavors to meld. The result is tangy, slightly sweet, and mildly spiced pickled onions with a satisfying crispness.

These pickled onions are versatile as a condiment for sandwiches, tacos, salads, or grilled meats, bringing acidity and crunch that brighten dishes. They keep for about a month refrigerated, making them a convenient prep for enhancing meals over several weeks.

Ingredients

  • 2 medium red onions
  • 1 cup white vinegar
  • 1/2 cup water
  • 1 Tbsp multicolored peppercorns
  • 1/2 tsp yellow mustard seeds
  • 1/2 tsp cumin seed
  • pinch of sea salt
  • 2 Tbsp sugar
  • 1 jalapeno pepper or Serrano pepper, sliced. Optional

Instructions

  1. Peel and thinly slice the onions. Note: I use my mandoline slicer for thin, even slices.
  2. Put the vinegar, water, and all the spices in a small pan and bring up to a simmer. Take off the heat, and add the onions and hot pepper. Mix well.
  3. Place the onions in a mason jar and pour the liquid over them. Make sure the liquid covers the onions. Let cool, then cover and refrigerate.
  4. Your pickled onions are ready to enjoy once they have chilled. They will keep in the refrigerator for a month.

Notes

  • Use any wide mouth canning jar suitable for pickling to store the onions safely.
  • Pickling spice can be substituted for the individual spices for convenience.
  • Keep the pickled red onions refrigerated and consume within one month for best quality.
