Description

Pico de Gallo combines seeded and chopped ripe Roma tomatoes, finely diced red onion, deseeded jalapeño, fresh chopped cilantro, freshly squeezed lime juice, and salt. The ingredients are mixed until evenly combined, creating a fresh, chunky salsa that is both tangy and mildly spicy.

The salsa's texture contrasts juicy tomatoes with crisp onion and the signature zest of jalapeño and lime. It is best prepared in advance and allowed to marinate for at least an hour in the refrigerator to let the flavors intermingle and the tomatoes release some moisture.

Pico de Gallo is widely used as a topping for Mexican dishes or served alongside tortilla chips. For best results, use very ripe tomatoes or substitute with cherry tomatoes when out of season and finely chop all ingredients to ensure even flavor distribution. Serve with a slotted spoon to avoid excess liquid.

  • 6 Roma tomato seeded and chopped
  • 1 jalapeño deseeded and deveined
  • 1/3 c. cilantro chopped
  • 1/2 red onion finely diced
  • 1 lime juiced
  • 1 tsp salt

Instructions

  1. Mix all ingredients in mixing bowl until combined. Add all ingredients to a medium bowl and stir together until well-combined. Pour into serving bowl to serve with chips as an appetizer or to add as a topping to other ingredients.
  2. You can enjoy this right away but it is best if you let it marinate for at least a hour in the refrigerator. 
  3. Serve with tortilla chips, on tacos, burritos, or anything else you can think of!

Notes

  • Using a chopper speeds up dicing, except for cilantro which should be chopped by hand.
  • Select very ripe tomatoes or substitute with cherry tomatoes when seasonal tomatoes are unavailable.
  • Finely dice all ingredients for balanced flavor in every bite.
  • Allow the salsa to rest at least 15 minutes, ideally about an hour, to let flavors meld.
  • Serve pico de gallo with a slotted spoon to avoid excess moisture.
  • Also known as salsa fresca or salsa cruda in some regions.
