Pico de Gallo Recipe (Easy & Authentic)

Pico de Gallo is a fresh, uncooked salsa made from diced Roma tomatoes, white onion, cilantro, jalapeño or Serrano pepper, lime juice, and salt. This recipe offers a chunky, bright condiment with a balance of sharp onion, tangy lime, herbal cilantro, and mild to medium heat from the chili pepper. It's quick to prepare and enhances many dishes as a fresh topping.

Description

This Pico de Gallo combines finely diced Roma tomatoes with white onion, serrano or jalapeño peppers, and freshly chopped cilantro. Lime juice and salt add brightness and seasoning, enhancing the vegetables’ natural flavors. The ingredients are stirred together and left to rest if possible, allowing juices to mingle and flavors to develop for a fuller taste.

The salsa is traditionally served as a chunky and fresh condiment alongside tortilla chips or as an accompaniment to Mexican dishes. Its texture is crisp with a balance of heat from the peppers and acidity from the lime, making it refreshing and flavorful.

It stores well refrigerated for up to three days, although the salsa softens over time due to the juices. For best texture, prepare it shortly before serving or stir before serving if refrigerated.

This recipe yields approximately 3 cups, suitable for gatherings or as a topping throughout the week.

Ingredients

Servings
  • 4 Roma tomato deseeded and diced
  • cup white onion finely diced
  • 1 bunch cilantro finely chopped
  • 1 Serrano pepper finely chopped, or jalapeño
  • 1 lime juiced
  • ½ teaspoon salt

Instructions

  1. Stir it all together. Add the tomatoes, onion, cilantro, pepper, lime, and salt to a bowl. Stir everything together.
  2. Serve. If you can wait 15 minutes to let all the flavors meld, that's best. But if you can't wait to dig in, I completely understand. Serve with tortilla chips and enjoy!

Notes

  • Allow the pico de gallo to rest a few hours after mixing for improved flavor melding.
  • Store leftovers in the refrigerator for up to 3 days; texture will soften as it sits.
  • This recipe makes about 3 cups, enough for multiple servings.
  • Serve with tortilla chips or cassava tortilla chips for gluten-free, grain-free options.
