Description
This recipe uses either homemade or store-bought pie dough, rolled to just under a quarter inch thick. After cutting into cookie shapes or strips, the pieces are brushed lightly with an egg and water wash to help the cinnamon sugar adhere and promote browning. Generous sprinkling of cinnamon sugar lends a warm spice and sweetness.
Baked at 375°F (190°C) for 9 to 11 minutes, the cookies develop lightly golden edges with a crisp bite. Cooling on the baking sheet allows them to set properly without breaking. The texture is reminiscent of a delicate, flaky pastry with added crunch from the sugar exterior.
These cookies can be varied by the shapes cut and are helpful for using pie dough scraps efficiently. They pair well as a simple sweet treat or accompaniment to tea or coffee.
Baking time depends on cookie size, with smaller pieces baking faster and yielding more cookies; larger shapes require longer baking and fewer cookies per batch.
Ingredients
- 1 pie dough homemade or store bought (click the link to make my homemade pie dough for this recipe, or scraps of pie dough
- 1 egg any size
- 1 teaspoon water
- ¼ cup granulated sugar
- 1 ½ teaspoons ground cinnamon
Instructions
- Preheat oven to 375F (190C) and line a baking sheet with parchment paper.
- Prepare egg wash by thoroughly whisking together egg and water in a small dish, set aside.
- In a separate small dish, whisk together sugar and cinnamon.
- Roll out pie dough or pie scraps to be just under ¼” (0.6cm) thick (if using store bought pie dough it will already be this thick, no need to roll).
- Use cookie cutters to cut out cookies and transfer them to baking sheet, spacing at least 1” (2.5cm) apart.
- Use a pastry brush to lightly brush all over the surface of each cookie with egg wash.
- Sprinkle generously with cinnamon/sugar mixture.
- Transfer to the center rack of 375F (190C) oven and bake for 9-11 minutes, or until cookies are just beginning to turn light golden brown. Allow to cool on baking sheet for several minutes before enjoying.
Notes
- Baking time and number of cookies depend on the size of cutters used.
- Small cookie cutters are preferred, but strips or diamond shapes cut with a knife work well.
- Using larger cutters increases baking time and reduces the total number of cookies.
- Allow cookies to cool several minutes on the baking sheet before handling to avoid breakage.
