Pierogi with Farmers Cheese (Vareniki Recipe)

Pierogi with Farmers Cheese, also known as Vareniki, are dumplings filled with a sweetened farmers cheese mixture. The dough is soft and pliable, made from eggs, sour cream, milk, and flour, providing a tender casing. Boiled until they float, the pierogi are typically served warm with butter and can be accompanied by sour cream or jam for added flavor contrast.

Description

This recipe for Pierogi with Farmers Cheese combines a creamy, mildly sweet cheese filling with a soft dumpling dough made from eggs, sour cream, milk, and flour. The cheese filling mixes farmers cheese with sugar and egg to bind it. The dough mixture is kneaded until no longer sticky, then rolled out and cut into circles. Each circle is filled with the cheese mixture, sealed tightly by folding and pinching the edges to prevent leakage during cooking.

The pierogi are boiled in water and cooked until they float, indicating doneness. After draining, they are typically topped with butter to enhance richness and flavor. Serving options include sour cream or jam to complement the light, creamy cheese filling.

These traditional dumplings offer a tender outer layer with a smooth, sweet cheese center, making them suitable for a comforting meal or appetizer.

Ingredients

Servings

Pierogi Filling

  • 2 lbs farmers cheese
  • 1/2 cup sugar
  • 1 egg

Pierogi Dough

  • 2 egg
  • 2 tbsp sour cream
  • 1/2 cup water lukewarm
  • 1 cup milk
  • 4 cups flour
  • 3 tbsp sugar
  • 1 tsp salt

Instructions

Pierogi Filling

  1. In a medium bowl, mix the farmer's cheese, sugar and egg until well combined. Set aside.

Pierogi Dough

  1. Whisk the eggs together with sour cream, lukewarm water, and milk until the mixture has an even texture.
  2. Add in flour, sugar, and salt to the liquid ingredients. Knead the dough by hand or with a stand mixer with dough hook attachment until it is no longer sticky.

Making Pierogi

  1. Roll out the dough on a well-floured surface. Using a cup or biscuit cutter, stamp out circles in the dough. Flour the cup to make it easier to cut circles.
  2. Fill the circles with the cheese filling, placing the filling in the center.
  3. Fold over the edges of the circles and pinch the edges with your fingers. Make sure the edges are tightly sealed so the filling does not fall out.
  4. Bring a pot of water to a boil. Add 10-20 vareniki and cook until they float to the top. Drain, then top the hot vareniki with a few small slices of butter. Optionally, serve with sour cream, jam, or sugar.
