Pikliz (or picklese)

Crunchy and spicy, pikliz is a typical Haitian condiment, mainly composed of julienned cabbage and carrots, pickled in vinegar.

Ingredients

  • 3 Scotch bonnet peppers
  • 1 cup cabbage shredded
  • ½ cup carrot shredded
  • ¼ onion , finely chopped
  • ¼ cup pea , frozen
  • 2 clove whole
  • ½ teaspoon salt
  • 5 black peppercorns
  • 3 cups distilled vinegar

Instructions

  1. Cut the stem of the Scotch bonnet peppers, cut into 4 pieces and keep the seeds.
  2. Place the peppers, cabbage, carrots, onions, peas, cloves, salt, and peppercorns in a jar, then add the vinegar.
  3. Close the jar tightly and let stand for at least 24 to 48 hours before using.
  4. Once opened, the pikliz can be kept in the refrigerator for several months.
