Description
This recipe blends grated extra-sharp cheddar and softened full-fat cream cheese with drained, finely diced pimentos and mayonnaise, then seasons the mix with Worcestershire sauce, onion and garlic powders, paprika, salt, black pepper, and cayenne for a touch of heat. The ingredients come together into a uniform, spreadable consistency that firms slightly in the fridge.
Chilling for at least two hours allows the flavors to develop and meld, producing a creamy cheese spread with a balance of sharpness from the cheddar, mild sweetness from the pimentos, and a subtle smoky warmth from paprika and cayenne. Pimento Cheese can be served as a dip, sandwich filling, or snack topping.

- 8 ounces cheddar cheese don't use pre-grated as it's coated with cellulose and doesn't blend or melt as well, extra-sharp, grated, (2 cups
- 8 ounces cream cheese cubed and softened at room temperature, full fat
- 4 ounce pimento thoroughly drained and finely diced (if not already, diced, jar
- 1/2 cup mayonnaise Duke's is traditional here in the South, good quality
- 1 teaspoon Worcestershire sauce
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika for a touch of smokiness can substitute smoked paprika
- 1/4 teaspoon salt , plus more to taste
- 1/4 teaspoon black pepper freshly ground
- 1/4 teaspoon cayenne pepper (add more or less as desired)
Instructions
- Place everything in a large mixing bowl and stir until thoroughly combined. Add salt and pepper to taste. Transfer the mixture to an airtight container and, for best flavor, chill in the fridge for at least 2 hours before serving to allow the flavors to meld. See blog post for serving ideas.
