Pimento Cheese Recipe

Pimento cheese is a creamy blend of sharp cheddar, cream cheese, mayo, peppers, and seasonings. It’s the ultimate party spread or dip!

  • 4 oz pimento pepper drained and rinsed (See Note 1
  • 2 cups cheddar cheese shredded, sharp
  • 1/4 cup mayonnaise See Note 2
  • 4 oz cream cheese softened
  • 1 tsp Worcestershire sauce
  • 1/4 tsp garlic powder
  • 1/4 tsp kosher salt
  • 1/4 tsp white pepper
  • 2 lices Bacon crumbled (optional, cooked

Serving

  • 1 Cracker or toasted baguette slices

Instructions

  1. In a medium bowl mix all of the ingredients by hand or with hand mixer until combined. I highly recommend not in a food processor as it will over puree, you'll want some texture.
  2. Cover and refrigerate 1 hour before serving. Spread on crackers of choice (or toasted baguette slices) or with sliced vegetables for scooping. I add a few pieces of cooked bacon on top, optional.
  3. Store leftovers in an airtight container in the refrigerator for up to 2 weeks.

Notes

  • It's important to rinse and drain the pimentos to keep the color and flavor of the cheese spread.
  • A traditional Southern mayonnaise to use would be Dukes Real Mayonnaise.
