  • 1-1/2 cups White Cheddar Cheese shredded
  • 1-1/2 cups cheddar cheese yellow, shredded
  • 4 ounces cream cheese softened
  • 1 4- ounce pimento diced, drained, jar-packed
  • 1/3 cup mayonnaise Duke's Mayo is a southern classic
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic optional, my personal addition, minced
  • 1/2 teaspoon cayenne pepper powder or to taste - use paprika for a milder version
  • salt about 1/2 teaspoon each, to taste
  • black pepper about 1/2 teaspoon each, to taste
  • hot sauce optional - Crystal or Tabasco are great here, dash of
  • 8 white bread sliced

Instructions

  1. Gently stir together the cheddar cheeses, cream cheese, pimentos, mayonnaise, Worcestershire sauce, garlic, cayenne, salt and pepper in a medium-sized bowl.
  2. Fold the mixture gently to combine until uniform.
  3. Taste and adjust for salt and pepper. Add in a dash or two of hot sauce to your preference.
  4. Divide the pimento cheese between 4 slices of white bread. Spread evenly, then top with remaining slices.
  5. Slice into into triangles or smaller squares and serve.
