Pimento Cheese Sandwiches

Pimento Cheese Sandwiches feature a creamy spread combining sharp cheddar, cream cheese, mayonnaise, and finely chopped pimentos. The spread maintains a slightly chunky texture and is seasoned with garlic powder and kosher salt. Served on sandwich bread, these sandwiches offer a savory, tangy profile with creamy and slightly piquant notes. Optional additions like pickles or olives can enhance the flavor and texture.

Description

This recipe blends shredded sharp cheddar cheese with softened cream cheese, mayonnaise, and chopped pimento peppers to create a pimento cheese spread. Garlic powder and kosher salt provide subtle seasoning, while pulsing in a food processor achieves a pale pink, chunky consistency. The spread is refrigerated until ready to assemble.

For the sandwiches, the pimento cheese is evenly spread on sandwich bread slices and topped with a second slice. Adding pickles or olives is optional, lending extra crunch and tang. The combination results in a creamy, flavorful sandwich with notes of sharp cheese, gentle heat from pimentos, and a smooth, spreadable texture.

These sandwiches can be served for lunch or as a snack. Keeping the spread chilled before assembling helps maintain the right texture.
