Pimm's Punch

Fruity Pimms Punch strikes a beautiful balance between sweet and tart and is perfect for entertaining. This bubbly, refreshing pitcher drink is a delicious twist on a classic Pimms cocktail.

Ingredients

  • 1 ½ cups lemon juice 12 oz, freshly squeezed
  • ¼ cup simple syrup 4 oz.
  • 9 oz. Pimm’s No. 1
  • 6 cups ginger ale 48 oz.

Garnishes

  • strawberries
  • orange or blood oranges
  • lemon plural
  • cucumber

Instructions

  1. Pour the lemon juice and simple syrup into a pitcher.
  2. Add the Pimm’s No. 1, and stir.
  3. Chill for up to 4 hours in the fridge.
  4. Pour in the ginger ale and serve immediately with fruit garnishes in individual cups.

Notes

  • Make your simple syrup 1-2 days in advance. Or do what I do and make a big batch so you’ve always got some in the fridge. Let it hang out in the fridge, and make a lot of it, depending on how many friends are joining you.
  • Make it a mocktail. If you’re not into alcoholic drinks, that’s OK. Simply leave out the Pimm’s No. 1, and you’ll have a gingery lemonade pitcher drink to serve instead.
  • Squeeze the lemons an hour or so before guests arrive—or take the store-bought shortcut. Just be sure to get the fresh-squeezed lemon juice instead of the shelf-stable kind. It makes all the difference, promise.
  • Make extra. After all, if you’re hosting several friends, you might as well double or triple the recipe so you’re not mixing up Pimms drinks by request throughout the evening.
  • You can make it ahead of time… partially. Mix the lemon juice with the Pimm’s. No 1 and simple syrup, and chill those together with the fruit garnish. When it’s time to serve, top the pitcher off with ginger ale. Why do we do this? The ginger ale will go flat, and that’ll make for a sad pitcher drink.
