Pineapple Bread Pudding with Pineapple Rum Sauce

Pineapple bread pudding is a tropical twist to the traditional dish. Make with coconut flakes, pineapple bits, and Hawaiian sweet rolls. This easy recipe is a nice addition to a brunch menu or enjoy as a dessert. Serve with a flavorful pineapple rum sauce.

Ingredients

  • 1 stick 8 tablespoons butter, salted at room temperature
  • 3/4 cups granulated sugar I used 1/4 cup Truvia
  • 4 egg beaten
  • 20 ounce pineapple diced, drained - SAVE juice, in can, tidbits or chunks
  • 8 Hawaiian sweet rolls cubed
  • 1/4 cup coconut unsweetened
  • pineapple rum sauce
  • 1/2 cup dark rum
  • 1/2 cup pineapple juice
  • 1/4 cup brown sugar

Instructions

  1. Grease an 8" x 8" baking pan and set aside.
  2. Preheat oven to 350 degrees
  3. Cube rolls by splitting in half, then putting the top back on and slice in quarters yielding 8 pieces per roll. 
  4. In a large mixing bowl beat butter and sweetener until creamy.
  5. In a separate mixing bowl beat eggs until light and frothy. Add to butter mix until well combined. 
  6. Fold in bread pieces ensuring each piece is coated with the egg/butter mix, then add in pineapple pieces (drained).  
  7. Place in prepared baking pan and top with coconut. Bake for 35-40 minutes or until edges are lightly browned and center is set.  
  8. While pineapple bread pudding is baking, in a small saucepan cook rum, pineapple juice and brown sugar on medium heat for 15-20 minutes or until liquid reduces by about 1/4 cup. You will be left with about 1 cup of sauce. 

Notes

  • If you use unsalted butter add a pinch of salt when whipping the butter. 
  • Adaptable to a sugar alternative (1/4 cup) if lowering sugar in your diet.
