Description
The Pineapple Caipirinha starts by infusing cachaça, a Brazilian sugarcane spirit, with peeled and sliced pineapple for several days to develop tropical fruit notes. To prepare the cocktail, fresh lime pieces are muddled with sugar to release their juices and oils, creating a tart and sweet base. Crushed pineapple is added for additional texture and flavor, then mixed with the infused cachaça. The mixture is served immediately over crushed ice, which chills and dilutes the drink slightly, balancing the flavors. Garnishes of lime and pineapple slices add a fresh appearance and a hint of extra aroma. This cocktail offers a tropical twist on the classic caipirinha, combining refreshing acidity with fruity sweetness for a vibrant and lively beverage.
Ingredients
For the infused cachaca:
- 1 cachaça bottle
- 1 pineapple peeled and sliced, whole
For the pineapple caipirinha – quantities are for 1 drink:
- 2 ounces cachaça pineapple infused
- ½ lime depending on size, cut in halves or quarters, piths removed, 1 lime
- pineapple ~2 tablespoons, freshly crushed
- 1 tablespoon sugar
- ice crushed
Garnishes:
- lime slices
- pineapple slices
- sugar optional, to garnish the rims
Instructions
- To make the pineapple infused cachaca place the pineapple slices in a large container, pour the cachaca over the pineapple slices, close tightly and let it rest in a dark cool place for a few days – but no longer than a week. Remove the fruit and strain the alcohol when it’s ready.
- Use a muddler to crush and mix the limes and sugar in a cocktail shaker.
- Add the cachaca, crushed pineapple, stir well and serve immediately over crushed ice.
