  • ½ cup butter unsalted
  • ¾ cup granulated sugar
  • 4 egg beaten
  • 20 ounces pineapple drained, canned, crushed
  • 8 lices white bread cubed (see notes)

Instructions

  1. Preheat your oven to 350 degrees F. Grease an 8-inch x 8-inch baking dish and set aside. (see note)
  2. Beat butter and sugar together with a hand mixer until smooth. Add the beaten eggs to the bowl and mix well.
  3. Add the drained pineapple and stir to combine. Add the cubed bread and mix everything really well.
  4. Pour the casserole mixture into the prepared baking dish. Bake uncovered for 45 minutes.
  5. Remove from the oven and cut into 6 pieces. Serve warm or cold.

Notes

  • Removing crusts from bread is optional and does not affect the final texture significantly.
  • Using an 8-inch pan provides a thicker casserole; a 9x13-inch pan produces a thinner version that serves more.
