Pineapple Casserole
Description
This casserole starts by mixing pineapple tidbits and crushed pineapple with all-purpose flour, granulated sugar, and shredded sharp cheddar cheese, then pouring the mixture into a greased casserole dish. The topping is made from crushed butter crackers combined with melted butter, sprinkled evenly on top. Baking at 350°F for about 35 minutes develops a golden crust and melds the flavors.
The sweet and tangy pineapple base contrasts with the sharp cheddar's savory notes, while the cracker topping adds a crunchy, buttery finish. The casserole texture is creamy beneath a crisp surface. It is served warm and can function as a side dish that combines fruit and cheese in a unique combination often found in southern-style cooking.
Leftovers can be refrigerated in an airtight container for up to three days and reheated gently in a microwave. For variation, adding chopped pecans or shredded coconut to the topping introduces new textures and flavors without changing the fundamental preparation.
