Description
The Pineapple Casserole uses two types of drained canned pineapple—crushed and chunks—combined with sharp cheddar cheese, light brown sugar, and all-purpose flour. Transferred to a baking dish, it is topped with a mixture of melted salted butter and crushed Ritz crackers, forming a textured and golden crust when baked.
Baking at 350°F for 30 minutes melds the flavors and softens the pineapples while crisping the cracker topping. Ingredients
- 20 ounces pineapple drained, 1 can, crushed
- 20 ounces pineapple chunks drained, 1 can
- 2 cups cheddar cheese shredded
- ½ cup light brown sugar
- ⅓ cup all-purpose flour
Topping
- ½ cup butter melted, salted
- 40 Ritz crackers crushed
Instructions
- Preheat oven to 350°F.
- In a large bowl, combine the pineapple, cheese, sugar, and flour. Transfer the mixture to a 2 QT baking dish.
- In a medium bowl, mix the melted butter and crushed crackers until evenly coated.
- Sprinkle the crackers over the top of the pineapple mixture and bake for 30 minutes. Serve warm.
