Pineapple Casserole

This Pineapple Casserole blends crushed and chunked pineapple with shredded cheddar cheese, brown sugar, and flour, topped with a crunchy buttered cracker crust. The mixture bakes until bubbly and golden, offering a warm side dish that balances sweetness, tang, and savory notes with a crisp topping that contrasts the tender fruit and cheese blend.

Description

The Pineapple Casserole uses two types of drained canned pineapple—crushed and chunks—combined with sharp cheddar cheese, light brown sugar, and all-purpose flour. This blend creates a sweet and slightly tangy base enriched by the cheese's creamy sharpness while the flour adds body. Transferred to a baking dish, it is topped with a mixture of melted salted butter and crushed Ritz crackers, forming a textured and golden crust when baked.

Baking at 350°F for 30 minutes melds the flavors and softens the pineapples while crisping the cracker topping. The contrast between the tender, moist fruit-cheese filling and the buttery cracker crust creates a distinct layered texture with both softness and crunch. This casserole serves well warm as a side dish during holiday meals or potlucks.

For a larger gathering, the recipe can be doubled and baked in a 9x13-inch pan. Granulated sugar may be substituted for brown sugar if desired. Different buttery crackers can replace Ritz, aiming for about 1.5 to 2 cups of crushed crackers for the topping.

Ingredients

Servings
  • 20 ounces pineapple drained, 1 can, crushed
  • 20 ounces pineapple chunks drained, 1 can
  • 2 cups cheddar cheese shredded
  • ½ cup light brown sugar
  • cup all-purpose flour

Topping

  • ½ cup butter melted, salted
  • 40 Ritz crackers crushed

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl, combine the pineapple, cheese, sugar, and flour. Transfer the mixture to a 2 QT baking dish.
  3. In a medium bowl, mix the melted butter and crushed crackers until evenly coated.
  4. Sprinkle the crackers over the top of the pineapple mixture and bake for 30 minutes. Serve warm.

Notes

  • Double the recipe for larger crowds and use a 9x13-inch baking pan for best results.
  • Granulated sugar can be used instead of light brown sugar without affecting taste significantly.
  • Other salted buttery crackers may substitute for Ritz crackers; use approximately 1.5 to 2 cups of crushed crackers.
