Pineapple Casserole
Description
The recipe begins by mixing drained pineapple chunks and reserved juice with both white and brown sugar, flour to thicken, and shredded cheddar cheese to add a rich and slightly sharp flavor. This mixture is poured into a butter-sprayed baking dish and spread evenly to ensure uniform cooking.
Next, a topping made by combining crumbled buttery crackers and melted butter is sprinkled evenly over the pineapple mixture. This topping bakes to a golden brown, offering a contrasting texture to the soft pineapple base beneath. The dish is baked at 350°F for 25 to 30 minutes until the topping crisps and the casserole bubbles.
Pineapple packaged in juice rather than heavy syrup is recommended to avoid excessive sweetness and moisture. Using a buttery cracker such as Ritz adds flavor and crunch. The casserole is best served immediately to maintain the crispness of the topping, as it can soften over time after baking. Optional parsley can be sprinkled on top for a touch of color.
Ingredients
- 2 ounce cans pineapple chunks drain and reserve 1/4 cup juice
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar
- 6 tablespoons all-purpose flour
- 2 cups cheddar cheese shredded
- 40 crackers such as Ritz, crumbled, buttery
- 1/2 cup butter melted
- 1 tablespoon parsley chopped, optional
- cooking spray
Instructions
- Preheat the oven to 350 degrees F. Coat a 9 inch square pan or 2 quart baking dish with cooking spray.
- Place the pineapple, 1/4 cup pineapple juice, granulated sugar, brown sugar, flour and cheese in a large bowl. Stir to combine.
- Pour the pineapple mixture into the pan and spread into an even layer.
- In a small bowl, mix together the crackers and butter.
- Sprinkle the crackers over the pineapple mixture.
- Bake for 25 to 30 minutes or until topping is golden brown. Add parsley if desired, then serve.
Notes
- Use canned pineapple chunks packed in juice, not heavy syrup, and reserve some juice for the recipe to control sweetness and moisture.
- Buttery crackers like Ritz work best for the topping, but any buttery-style cracker can be substituted.
- Serve the casserole immediately after baking since the cracker topping will soften if left to sit.
