Pineapple Casserole

The Pineapple Casserole combines crushed and drained pineapple with granulated sugar, all-purpose flour, sharp cheddar cheese, and a buttery Ritz cracker topping. This mixture bakes until the top is golden and the filling heated through, creating a sweet, tangy, and creamy side dish with a crunchy topping. It’s a unique warm casserole blending fruity and cheesy elements for a comforting flavor and texture contrast.

Description

This Pineapple Casserole is prepared by mixing drained crushed and chunked pineapple with sugar, flour, and shredded sharp cheddar cheese, resulting in a sweet and slightly tangy filling. This pineapple-cheese blend is poured into a greased casserole dish. A topping is made from crumbled Ritz crackers, reserved pineapple juice, and melted butter, which when baked forms a crisp, golden crust.

The casserole bakes at 350°F until it is hot and the topping turns brown and crunchy. The sweet pineapple contrasts with the sharp cheddar to create an intriguing flavor profile. The buttered cracker topping adds texture and richness, complementing the creamy interior.

Serve the casserole warm as a side dish or accompaniment. It can be a comforting addition to meals that benefit from sweet and savory elements. Optional mix-ins like toasted nuts, coconut flakes, maraschino cherries, or nutmeg can personalize the dish’s flavor and texture.

Leftovers refrigerate well for about 4 days and reheat effectively either in a microwave or an oven. Adjust the cracker topping quantity if a less crunchy texture is prefered to tailor the mouthfeel according to taste.

Ingredients

Servings
  • 20 ounces pineapple crushed, drained
  • 20 ounces pineapple drained with 6 tablespoons of juice reserved, tidbits or chunks
  • 1 cup granulated sugar
  • 6 Tablespoons all-purpose flour
  • 2 cups cheddar cheese shredded sharp
  • 8 Tablespoons butter melted, salted
  • 2 leeves Ritz crackers crumbled

Instructions

  1. Preheat the oven to 350°F. Butter or spray a medium-sized casserole dish (about 9x11) with cooking spray. Drain pineapple, reserving some of the juice for the topping.
  2. Whisk together the flour and sugar in a large bowl. Add the cheese and stir.
  3. Add the drained pineapple, stirring until everything is evenly combined. Pour into the prepared casserole dish.
  4. In a separate bowl, combine the crumbled crackers, 6 tablespoons of the reserved pineapple juice, and the melted butter. Sprinkle evenly over the pineapple mixture.
  5. Bake for 30 to 40 minutes, until golden brown on top and hot all the way through. Serve warm.

Notes

  • For a less crunchy topping, reduce the Ritz cracker amount to one sleeve.
  • Store leftovers in the refrigerator for up to 4 days; reheat covered in the oven or in the microwave.
  • Customize by adding 2/3 cup of toasted walnuts or pecans for extra crunch.
  • Mix in 2/3 cup sweetened coconut flakes to add flavor and texture variation.
  • Incorporate 1/2 cup halved maraschino cherries or 1/4 teaspoon ground nutmeg for different flavor notes.
