Ingredients
- 20 ounces pineapple crushed, drained
- 20 ounces pineapple drained with 6 tablespoons of juice reserved, tidbits or chunks
- 1 cup granulated sugar
- 6 Tablespoons all-purpose flour
- 2 cups cheddar cheese shredded sharp
- 8 Tablespoons butter melted, salted
- 2 leeves Ritz crackers crumbled
Instructions
- Preheat the oven to 350°F. Butter or spray a medium-sized casserole dish (about 9x11) with cooking spray. Drain pineapple, reserving some of the juice for the topping.
- Whisk together the flour and sugar in a large bowl. Add the cheese and stir.
- Add the drained pineapple, stirring until everything is evenly combined. Pour into the prepared casserole dish.
- In a separate bowl, combine the crumbled crackers, 6 tablespoons of the reserved pineapple juice, and the melted butter. Sprinkle evenly over the pineapple mixture.
- Bake for 30 to 40 minutes, until golden brown on top and hot all the way through. Serve warm.
