These Pineapple Coconut Muffins are a tropical breakfast treat with chunks of pineapple and sweet coconut in a light and fluffy muffin base. It's like a pina colada in muffin form!

Ingredients

  • 2 cups all-purpose flour 282 grams
  • 3/4 cup granulated sugar 150g
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter melted, salted
  • 2 egg beaten, large
  • 3/4 cup milk
  • 1 teaspoon vanilla extract pure
  • 1 1/2 cups pineapple tidbits drained
  • 1 1/2 cups coconut divided, shredded, sweetened

Instructions

  1. Preheat the oven to 375°F.  Spray a muffin pan with baking spray.
  2. Whisk flour, sugar, baking powder, and salt together in a large bowl.
  3. Whisk melted butter, eggs, milk, and vanilla in a separate bowl. Add to the flour mixture and stir gently just until combined.
  4. Stir in pineapple and 3/4 cup of the coconut.
  5. Divide batter evenly into muffin cups. Sprinkle with the remaining coconut.
  6. Bake for 22-25 minutes until done.
