Pineapple Corn Salsa

This recipe is the perfect summer recipe. Enjoy it with tortilla chips on the beach, use it to top grilled salmon, or in a burrito bowl. This recipe is quick, light, and fresh!

Ingredients

Servings
  • ½ cup red onion finely diced
  • 1 jalapeño finely diced
  • 1 cup Roma tomato finely diced (about 2 Roma tomatoes
  • 1 oz can corn drained
  • 1 oz can pineapple cut each tidbit into thirds, tidbits
  • ½ cup cilantro chopped
  • lime juice of 1/2
  • ¾ tsp salt

Instructions

  1. Combine all ingredients together in a bowl. Enjoy!
